Light & hearty, all at once! This vegan soup is bright yet complex thanks to the fresh flavour of sprouted almonds & broccoli, and the smoky undertones of paprika & turmeric. Also, mostly allergy-free. Mostly.
- 1 head broccoli - diced
- 1/2 red onion - diced
- 6 cloves garlic - pressed or minced
- Almonds - 2 cups
- fresh coriander
- italian herbs
- Sea salt
- Allspice
- cracked black pepper
- paprika
- turmeric
Soak almonds overnight, then discard water. Blend with 3 cups of fresh water. Set aside.
Sauté onions & garlic in olive oil until translucent with a big pinch of coarse salt, crumbled dried italian herbs & freshly cracked pepper & allspice.
Add chopped broccoli & about 2 cups of water, then simmer for about 30 minutes. Stir in almond milk, paprika & turmeric.
Garnish with coriander chiffonade.
